Easy Pot Roast Recipe


I made this last week when it was blizzarding out. It turned out perfect, as always. The meat was tender and moist and the carrots were wonderful. This is such a reliable recipe I thought I'd post it.

4 pounds of beef - this time I used boneless beef ribs, but any good beef for pot roast will work. I always look for a lacing of fat throughout the meat rather than completely lean since this ensures a moist roast. I cut off any thick fat.

1 jar of beef gravy - I always avoid any with MSG

2 pounds of carrots

onion if I have it

Place enough aluminum foil to be able to seal up over the contents in a glass baking dish about 12 x 9 x 2 inches or there abouts .
Place the beef in the pan, surround with carrots. Pour entire jar of gravy all over everything. Fold the foil over and seal. Bake at 300 degrees Fahrenheit for 4 hours.

This also works well with potatoes. It fed our family of 3 for two nights.
